Some would say it's the most important part of any roast. We would say it's delicious
Remove the turkey from the roasting tray and scoop out the excess fat, leaving 1 tbsp in the tray.
Put the roasting tin on the hob and stir in 25g flour.
After a couple of minutes, slowly add 700ml turkey or chicken stock, ladle by ladle. Bring it to the boil, then reduce to a simmer. Simmer until it thickens to your chosen consistency.
Season to taste, and serve with your roast.
