When it comes to hotter weather fodder we all lose our imaginations a bit. It can sometimes feel like you've eaten salad every night of the week – and after a hard day's graft that's just not going to cut it.

Here's how to get that warm fuzzy, full feeling from the lightest summer ingredients.

1. Mediterranean fish tray bake

For a light fish supper with a saucy twist take inspiration from those who cook while the sun beats down: our Mediterranean friends.

2. Mild spiced lamb salad

Another one giving salad a load more street cred is this spicy number. Even better, this North African inspired lamb with cous cous will be on your table in under 20 mins. Yum.

3. Salmon & pea tagliatelle

Pasta needn't be heavy with some summery ingredients thrown in to the mix. This recipe includes tinned salmon and frozen peas for a super-quick but really fresh-tasting bite to eat.

4. Asparagus and goats' cheese risotto

Creamy and comforting, this risotto packs a bite with the best of the season's asparagus. This one will also make you a winner among the veggie community who will gladly be lifted out of their spinach and ricotta rut.

5. Harissa halloumi hash

You can throw pretty much whatever you like into a hash - but we love this flavoursome combo of chorizo, halloumi and fiery harissa in this recipe.
