Courgettes – one of the best things about summer

1. Easy courgette tart

Turn yourself into a picnic legend with a simple puff pastry tart that showcases courgettes in all their seasonal glory (and only takes you about half an hour). Simples.

2. Chocolate & cherry cheesecake brownies

Chocolate, check. Cheesecake, check. Juicy, fresh, seasonal cherries, check. These gooey treats are making it pretty difficult to dislike them.

3. Taglierini with scallops, courgettes, tomatoes and capers

For a hearty dish that’s packed full of Italian summer flavour, try Theo Randall's 30-minute pasta with sweet, seasonal scallops and a bite of capers. Delicious.

4. Easy strawberry layer cake

Capture the quintessentially British taste of summer day, without going anywhere near an oven.

5. Beetroot and puy lentil salad

Give your picnic the ultimate pop of colour and flavour with this easy salad by Rachel Khoo. Try her trick of whizzing dill with a little oil and vinegar in the blender for an aromatic and speedy dressing.

6. Harissa and apricot chicken

It might not be your first thought to turn the season's juiciest apricots into a savoury supper, but try this spicy North African-inspired dish and there's no going back.

7. Sea bass with asparagus, broad beans and spinach

Make the most of the year’s finest fish and seasonal supergreen vegetables with this healthy supper. Poaching the veggies in stock at the end keeps them moist, and makes a lightly seasoned sauce for the sea bass, too.
