The tootiest, fruitiest sundae you ever did see
Trying to be virtuous this summer? That's no reason to miss out on all the ice cream sundae fun. Here's how to build the tootiest, fruitiest of ice cream sundaes that is so delicious you definitely won't feel like you're missing out. G'wan. It would be very rude not to.
First things first, you'll need to pick your ice cream sorbet flavour. We used raspberry and mango, but anything you like will do.
Next, pick a selection of summer fruits. We used strawberries, kiwi, blueberries, and blackberries because they look beautiful arranged on the outside of the sundae glass (and a cherry for the top, obvs).
Then all you'll need is some granola for crunch, raspberry coulis as your sauce, and some 'cream' made from whisking together the thick, solid coconut cream from the top of a chilled can of coconut milk with honey or agave nectar.
Building your sundae
The idea is to make sure you build your sundae with distinctive layers, adding granola every third layer for crunch. We started with crushed blackeberries with couli as a nice surprise at the end, and alternated mango and raspberry sorbet with our favourite fruits placed around the outside to look all pretty. Top with the coconut cream and a cherry. Simples!
