Long bank holiday weekends mean more time to enjoy a leisurely brunch with the family, so here's how to make the most of those lazy breakfasts

Easter is all about family time with lots of feasting, so ditch the usual bowl of cereal for a special Easter breakfast. It will make a change from eating all those chocolate eggs, anyway.

 

1. Courgetti fritters with poached eggs

Turn ready-made courgetti into these little beauties. With an egg on top, of course.

 

2. Bacon, egg and mushroom breakfast pies

What's better than a fry-up? A fry-up in a pie, that's what. Especially when it's eggs, bacon and juicy mushrooms covered in melted mozzarella.

 

3. Rhubarb and custard muffins

Bake a bit of nostalgia into Easter breakfast with tangy rhubarb muffins served with a dollop of fresh custard on top. 

 

4. Cheesy bacon and egg crumpets

Crumpets deserve so much more. Pile your toasted crumpet high with cheese, tomato, bacon, onion chutney, soft poached eggs, and a sprinkling of parsley to make a Full English with a difference.

Why not upgrade your French toast? Grilled pancetta makes the crispiest bacon and with grilled sweet vine tomatoes and a sprinkling of chives, you've got an Easter alternative to an egg-and-bacon fry-up.

Stratas are an American savoury muffin and frittata hybrid. Genius! This recipe is stuffed with ham, cheese and asparagus, but you could pile them up with your favourite savoury ingredients, or omit the ham for a meat-free version.

 

8. Eggs Benedict with avocado

Two big food trends make the best of friends in this breakfast recipe, with a runny poached egg on top of creamy avocado slices. The hollandaise is easy to make but tastes every bit as good as the more complicated version (promise). A seriously tasty Easter breakfast!

Eggs Benedict gets a spicy South American twist with chorizo and guacamole piled on fluffy toasted muffins, topped with sliced tomatoes and soft-poached eggs. Chilli lovers: this is your perfect breakfast.

Smoked salmon makes an elegant Easter breakfast, especially when it's sitting on a toasted muffin with wilted spinach, soft poached eggs and an easy hollandaise sauce. This hearty breakfast will give you a head start for that Easter egg hunt later, too.
