A lighter, crisper take on Bloody Mary by Mixologist Richard Woods

“This is one of my favourite cocktails. Not just for its flavour but also as a talking point amongst friends. This can quite simply be made at home using everyday household ingredients and equipment. For this recipe, the ingredients listed are for five guests.” Richard Woods


Ingredients for the Consommé

It's best to prep everything the night before and bring it out of the freezer in the morning to serve at lunch

  1. 3g Ground black pepper
  2. 5g Crushed pink peppercorns
  3. 3g Sea salt
  4. 2g Celery salt
  5. 10 Dashes tabasco
  6. 15 Dashes green tabasco
  7. Juice of one lemon
  8. 15 Dashes Worcester sauce
  9. 500ml Tomato juice. Try to avoid the cheaper brands as the water content is quite high, and I find the flavour inferior


  1. 1x non-reactive container, with lid suitable for mixing
  2. 1x funnel, large sieve or colander
  3. 1x two-fold muslin (a coffee filter or tea cloth works just as well)
  4. 1x bottle or deep container to store the mix after thawing


  1. Pour the tomato juice into a non-reactive sealable container 
  2. Add the other ingredients and stir all - leave to rest for 1hr
  3. Secure the lid and place in the freezer
  4. The following morning, remove from the freezer (your mix should now be a solid block)
  5. Prepare your filter by adding a two-fold muslin or a coffee filter to a funnel or large sieve, over a bottle or deep container.
  6. Remove the frozen tomato mix and place in the funnel and allow the frozen tomato mix to drip thaw naturally through your home-made filter. NB: This takes several hours, so I suggest placing it back in the fridge and return to it to check its progress
  7. Bottle and reserve clarified juice. Mix will keep for 7 days
  8. Infuse 5oml of vodka with 15-20gr Basil for 24hrs

Pre-chill your Martini/Coupette glass. Stir vodka infusion and consommé with ice until well chilled. Strain into glass and garnish with a floating basil leaf.
