Friends coming over? That twice-baked Camembert soufflé, lobster thermidor and foraged-fruit millefieulle seemed like such a good idea at the time, didn’t it?

Seriously guys, life is often too hectic, so when mates are coming round it’s best to keep it simple and these recipes do just that.

You're oh-so welcome.

To kick things off…

Eating your greens has never been so tempting.

Asian-style cauliflower wings with a chilli dip

Cheaper and more quirky than chicken. Let’s face it – cauliflower’s our favourite ingredient of 2016.

Zesty asparagus with parmesan

Let the mighty green spears speak for themselves, dressed simply with a drizzle of oil and parmesan shavings.

Watercress soup

Simmer, then shove everything in a blender. Couldn’t be easier.

For the main event…

Roasted lemon sole with butter bean mash

Got 20 minutes? That’s all you need for this dish.

Microwave roasted-garlic risotto with kale

Forget stirring a risotto until your arm's about to fall off and cook the whole thing in the microwave. Simple.

Chicken, chickpea and kale pot

Fired up with smoky paprika, all this one-pot needs is a pile of crusty bread.

Sundried tomato-roasted salmon

Sprinkle with fresh parsley when cooked and serve with samphire and new potatoes.

And something sweet…

Banoffee sundaes

The five-minute salted caramel sauce recipe you need for this is about to become your best friend.

Chocolate espresso pots

Melted chocolate, broken biscotti, marscarpone and a generous splash of Baileys. We love.

Black forest brownie layer

Cheat with ready-made brownies and create the ultimate ice-cream sandwich. We won’t tell if you don’t.

Tropical fruit salad with mint and passion fruit syrup

This is the next best thing to lounging in the sun and sipping a piña colada. Totally tropical.
