Delicious reasons to stock-up on the frozen stuff
If frozen spinach doesn’t feature in your diet much, you’re missing out on a highly nutritious, delicious vegetable that couldn’t be easier to prepare. Rich in vitamins and a good source of iron, spinach is frozen quickly after harvesting, locking in nutrients and allowing it to keep for months. It’s also highly compacted so you get a lot of spinach for your buck.
When is it best to use frozen spinach?
Frozen spinach really comes into its own in cooking. So keep the fresh stuff for salads and get out the frozen for dishes that call for volume and less moisture (it’s much easier to squeeze the water out of frozen spinach). Here are easy ways to use frozen spinach in cooking.
1. Easy spinach soup
Whizz frozen spinach up with stock, seasoning, cubed boiled potatoes and perhaps a little garlic. Heat through again and add a dash of cream to finish. It’s quick, easy and good for you, too.
2. Quick pizza topping
Add spinach to a pre-topped pizza before cooking or buy a ready-made pizza base and create your own: add a layer of a rich pasta sauce, then spinach, olives, some cooked meat if you like, sliced peppers and a mixture of grated mozzarella and cheddar cheese. Cook in a hot oven for 8-10 minutes.
3. Spinach colcannon
Stir spinach into mashed potato, season with a little grated nutmeg and black pepper and top with a knob of butter to serve.
4. Pasta sauce
Pasta sauce, whether creamy or tomato-based, can be enriched with frozen spinach: just put a handful into your favourite sauce and heat through.
5. Spinach omelette
Start off your omelette as you usually would, then add the spinach before it sets. Sprinkle with grated cheese and seasoning, then fold over for a quick lunch or supper.
6. Super smoothie
Because it is mild in flavour, although slightly bitter, spinach can be quite delicious in a smoothie. Mix it with tropical fruits like pineapple, banana or mango, and the sweetness balances the bitterness to make a really nutritious breakfast drink.
7. Simple sag aloo
Fry together some onion, garlic and ginger, then add cubed parboiled potatoes, chilli flakes and mustard seeds and a splash of water. Continue to cook, covered, for a few minutes until the potatoes are tender. Throw in some spinach and heat through to serve. This makes a great side dish to curries, or a tasty lunch or supper dish.
8. Mac ‘n’ spinach cheese
When making macaroni cheese, add some spinach to the cheese sauce to make the dish more colourful and nutritious.
