Pancakes never really go out of fashion. But a new take on our favourite flat treat is knocking toppings off the top spot. Introducing stuffed pancakes... Oh my.

The technique

There are various methods of stuffing your pancake. Some require you to freeze your filling until firm, before placing it on top of a half-cooked pancake then coating it with extra batter. The result is a sealed 'pancake sandwich' of epic proportions.

 

Others herald a simpler 'fold over' technique. Although it's not as tidy as the 'chill and seal' method, this is just as delicious. Think of it as the calzone of the pancake world.
