Ingredients

  • 8 slices wholemeal bread
  • 2 tsp lighter butter spread
  • 1 tsp dijon mustard
  • 60g rocket
  • 8 slices cooked beef brisket
  • 100g caramelised onion houmous

Method

    Butter the bread with the the spread and mustard. Top with some rocket leaves, 2 beef slices and 25g houmous.

    Place the second slice of buttered bread on top and cut into triangles. Repeat with the remaining ingredients to make 4 rounds of sandwiches in total.
