Place ginger, sesame oil, garlic, mirin and soy sauce into bowl and mix, add salmon pieces and marinade for 10 minutes.
Preheat nonstick pan and add brush a little vegetable oil over the salmon pieces.
Fry them for 4 to 5 minutes each side, skin side down first, until they are cooked and opaque.
Cook the noodles whilst the salmon is cooking, accordoing to the directions on the packet.
Drain the noodles and divide between the plates.
Sit the cooked salmon on top of the noodles and spoon the kimchi on the salmon and around the salmon.
Scatter the chopped spring onions over as a garnish.
