Cut the bread slices in half diagonally. Crack the eggs into a shallow bowl, add the milk and beat together with a fork.
Heat the butter and oil in a large frying pan until foamy (but not too hot).
Dip a piece of bread into the mixture making sure it is thoroughly coated and then put it straight into the pan. Repeat with the other slices. You will probably fit 3 or 4 pieces into the pan at one time.
Cook for 2 to 3 minutes over a medium heat until golden and then turn over and cook for another 2-3 minutes.
For a treat you can try sprinkling just a tiny pinch of cinnamon and golden caster sugar over the top.
