Ingredients

  • 8 frozen thick pork sausages
  • 4 tablespoons olive oil
  • 225g basics tomatoes, halved
  • 200g basics mushrooms, sliced
  • 8 slices basics wholemeal bread, cut in half diagonally

Method

    Preheat the oven to 180ºC, fan 160ºC, gas mark 4. Place the sausages on a baking tray and cook in the oven for 25 minutes, until they’re golden brown and no pink colour remains.

    Heat ½ a tablespoon of the olive oil in a large frying pan. Add the tomato halves, cut-side down, and cook over a high heat for about 3 minutes, until starting to brown. Remove and keep warm.

    Add 1 tablespoon of olive oil to the pan and fry the sliced mushrooms for 3-4 minutes. Remove and set aside.

    Add the remaining oil to the pan and in batches, fry the slices of wholemeal bread over a medium–high heat until golden and crispy. Serve with the mushrooms, sausages and tomatoes.
