Put the chicken pieces in a large bowl and sprinkle over a little olive oil and the Discovery fajita seasoning mix. Turn the chicken until it is evenly coated in the oil and spice mix.
Heat a heavy based frying pan until very hot and add the chicken pieces, then fry for about 3 minutes until the meat is well browned all over.
Add the onion and peppers and cook for a further 2 minutes, or until the meat is cooked through.
Warm the tortillas according to pack instructions. Serve the spiced chicken and vegetables with the warm tortillas, salsa, soured cream and guacamole toppings.
Roll up the fajitas with your choice of toppings and enjoy.
Cook's tip: You can easily make these fajitas more or less spicy to suit your family's tastes. Try the Mild or Hot seasoning mixes from Discovery, or if you like it really spicy, add some green jalapeno slices.
