• 2 teaspoons chilli powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon Flora Cuisine
  • 2 skinless chicken breasts cut into strips (about 150g each)
  • 1 onion, peeled and thinly sliced
  • 1 avocado, halved and stone removed
  • 1 lime, juice only
  • 4 flour tortillas
  • 1 red pepper, sliced
  • 150g low fat natural yoghurt
  • Handful of fresh coriander, chopped

    Combine the chilli and paprika and sprinkle evenly over the chicken.

    Heat the Flora Cuisine in a non stick frying pan until it turns from creamy to clear, and fry the chicken with the onion until it is cooked through.

    Dice the avocado flesh and place in a small bowl. The easiest way to do this is to use a sharp knife to score a grid pattern through the flesh on each half of the avocado, being careful not to cut through the skin. Then simply scoop out out the squares of flesh with a spoon. Sprinkle the lime juice over the chopped avocado.

    To serve, divide the chicken and onion evenly between the tortillas, add the pepper, avocado, yoghurt and chopped coriander, roll up and enjoy!

    Cook's tip: Fajitas are a great sharing meal, so you could just place everything in separate dishes on the table and let everyone help themselves.
