Dry fry the turkey in a non-stick frying pan on a moderate heat for 8 minutes, allowing the turkey to become brown and slightly crispy.
Add the Pad Thai sauce and rice.
Stir-fry for a further 4 minutes.
Remove the turkey and rice mixture from the heat and allow to cool.
Arrange the lettuce on a platter and spoon the turkey and rice mixture on top.
Drizzle with lime juice and serve with chillies and spring onions to garnish.
