• 6 thick slices of country or sourdough bread
  • 2 large garlic cloves, halved
  • 3 large ripe vine tomatoes, skinned and chopped
  • 2 - 3 tbsp extra-virgin olive oil
  • Sea salt

    Toast the bread until golden. Rub with the cut side of the garlic. With the back of a spoon, press the tomatoes on to the bread. Drizzle with the oil and sprinkle with sea salt. Serve warm.
