Ingredients

  • 1 cup coconut milk
  • 1 cup almond milk
  • ½ cup chia seeds
  • ¼ cup maple syrup
  • zest of ½ a lemon
  • ½ pomegranate, seeded
  • Lemon balm

Method

    In a medium-size bowl, mix all ingredients well to combine. Transfer pudding into shot glasses and refrigerate for at least 2 hours.

    Sprinkle with pomegranate seeds and decorate with lemon balm, then serve.
