Ingredients

For the apple jelly:

  • 500ml cold apple juice
  • 1 sachet gelatin

For the foam:

  • 100ml cold apple juice
  • ½ sachet of gelatin

Method

To make the apple jelly:

    In a large bowl, combine 3 tbsp of the apple juice with the sachet of gelatin. Cover and then microwave for 1 minute, stirring halfway through. Remove from the microwave and stir until the gelatin has completely dissolved.

    Add the rest of the apple juice into the bowl and stir to combine. Transfer to a jug and then pour into a pint glass. Leave in the fridge to set overnight.

To make the foam:

    About 20 minutes before serving, combine 3 tbsp of the apple juice with the gelatin in a medium bowl. Cover and then microwave for 1 minute, stirring halfway through. Remove from the microwave and stir until the gelatin is completely dissolved.

    Add the remaining apple juice and vigorously whisk for 2 minutes, after which you should have a bowl of frothy foam. Take the set pint of apple jelly out of the fridge and scoop foam on to the top so that it looks like a pint head. Leave to set in the fridge for 15 minutes, then serve.
