Ingredients

  • 80g sesame seeds
  • A handful of chives
  • 2 red chillies, deseeded and chopped
  • 320g skinned pollock
  • 1 egg, beaten
  • 2 x 300g packs stir fry rice noodles
  • 2 x 200g packs mange tout
  • 2 tablespoons sesame or olive oil
  • Lime wedges, to serve

Method

  1. 1 Preheat the oven to 200ºC, fan 180º C, gas mark 6. Toast the sesame seeds on a baking dish in the oven for 15 minutes, shaking halfway through to ensure they cook evenly.
  2. 2 Meanwhile, place the chives and red chillies in a blender and whizz until finely chopped. Add the pollock and egg and whizz for a few more seconds.
  3. 3 Shape tablespoonfuls of the mixture into small patties and roll in the sesame seeds until coated. Place on a baking tray and bake in the preheated oven for 10 minutes.
  4. 4 Meanwhile, prepare the noodles following pack instructions and steam the mange tout.
  5. 5 Toss the noodles and mange tout together with the oil and serve with the pollock bites and lime wedges for a tasty meal.
