• 4-6 langoustines (2-3 per person)
  • 25g butter
  • 1 small garlic clove, peeled and finely chopped
  • 75g mayonnaise
  • 2 lemons, zest and juice of 1, plus extra wedges to serve
  • ½ x 28g pack parsley, chopped

  1. 1

Preheat the grill to high. Place the langoustines in a shallow roasting tin and dot the butter on top.

  2. 2

Grill the langoustines for 2-3 minutes each side.

  3. 3

Meanwhile, mix together the garlic, mayonnaise, lemon zest and parsley.

  4. 4

Remove the langoustines from the grill and sprinkle with lemon juice, then serve with the mayonnaise and lemon wedges to squeeze over.

  5. 5

Cook's tip: Although perfect as a romantic starter for 2, this could easily be multiplied for a special dinner party. The lemon and parsley mayonnaise can be made in advance and stored in the fridge until ready to serve.
