Mix the avocado, mango and grapes in a bowl.
Gently pan fry the prawns in olive oil for 5 minutes and glaze with orange juice.
To serve, fill each avocado skin with 3 prawns and a large spoonful of avocado, mango and grape mixture, then season with olive oil, salt, chilli and coriander.
