Ingredients

  • 2 avocados, diced into 1cm cubes (keep skin for serving)
  • 2 mangos, diced into 1cm cubes
  • 200g red and white grapes, halved
  • 16 king prawns, shelled
  • 1 sweet chilli, finely chopped
  • 1 bunch of fresh coriander, finely chopped
  • 4 tablespoons orange juice
  • 2-3 tablespoons extra virgin olive oil
  • Pinch of salt

Method

    Mix the avocado, mango and grapes in a bowl.

    Gently pan fry the prawns in olive oil for 5 minutes and glaze with orange juice.

    To serve, fill each avocado skin with 3 prawns and a large spoonful of avocado, mango and grape mixture, then season with olive oil, salt, chilli and coriander.
