Ingredients

  • 2 tsp olive oil
  • 1 onion, finely diced

  • 400g tin chopped tomatoes
  • 400g tin cannellini beans, rinsed and drained
  • 2 tbsp light brown
 sugar

  • 1½ tbsp red wine vinegar
  • 1 tsp tabasco

  • 110g cooked barbecue pulled pork
  • 8 small slices of sourdough

  • 2 tbsp chopped coriander

Method

  1. 1

    Heat the olive oil in
 a deep frying pan 
and fry the onion for 
5 minutes until soft. Add the chopped tomatoes, then half fill the tin with water and pour this in. Add the cannellini beans, sugar, vinegar and tabasco. Simmer for 10 minutes until thickened.

    Stir in the pulled pork, season well and simmer for another 5 minutes to heat through. Toast the bread.

    Taste the beans and add more tabasco or sugar if needed, then spoon over the toasts. Scatter with the chopped coriander to serve.
