Preheat the oven to 200°C/gas mark 6. Whisk the Pimm's, honey, soy sauce, oil, orange zest and garlic together until combined.
Put the chicken in a medium roasting tray and pour over the marinade, tossing together until the chicken is coated. Add the orange segments, then transfer to the oven.
Cook for 50-55 minutes, turning and basting in the sauce every 15 minutes or so, until the chicken is sticky and cooked through. Remove from the oven and scatter over the chopped mint leaves to serve.
