This no-hassle traybake is packed with delicious greens and can be on the table in under half an hour. Delicious and full of mouthwatering flavour, spice up your salmon with chilli, lime and coriander for the perfect midweek dinner
Put the salmon fillets in a shallow dish. Add the lime juice, garlic and chilli and cover. Leave to marinate in the fridge for 30 minutes.
Preheat the oven to 200°C/gas mark 6. Put the pak choi, mange tout and sugar snap peas in a bowl and pour over the sesame oil. Mix well, ensuring the vegetables are well coated. Transfer to a large roasting tray along with the squeezed limes. Add the salmon and marinating liquid and bake for 15 minutes. Remove from the oven and scatter with coriander to serve.
