Put the salmon fillets in a shallow dish. Add the lime juice, garlic and chilli and cover. Leave to marinate in the fridge for 30 minutes.
Preheat the oven to 200°C/gas mark 6. Put the pak choi, mange tout and sugar snap peas in a bowl and pour over the sesame oil. Mix well, ensuring the vegetables are well coated. Transfer to a large roasting tray along with the squeezed limes. Add the salmon and marinating liquid and bake for 15 minutes. Remove from the oven and scatter with coriander to serve.
