Bring some water to the boil in a small pan. Add a pinch of salt. Add the broccoli and green beans (or any other leftover veg you might be using) and boil for 2-3 minutes. Drain and set aside.
Heat the vegetable oil in a large pan. Add the chicken breast and cook for 2-3 minutes.
Add the onions and peppers. Cook for 2-3 minutes until they are soft. Add the chilli and ginger and cook for another minute.
Add the sauce and bring to the boil. Simmer for 5 minutes or until the chicken is cooked through and piping hot.
Add the cooked vegetables and tomatoes. Then add the tortillas or chapattis and heat through.
Sprinkle in the lime juice and coriander and serve.
