Heat the oil in a large frying pan on a medium heat and cook the onion for 5 minutes till starting to soften. Add the ginger, garlic and chillies and cook for a further 5 minutes.
Stir in the coriander, cumin and garam masala along with the cardamom pods and cook while stirring for another 2 minutes on a medium heat.
Add the lamb mince and stir well to make sure the spice mixture and mince are mixed well. Cook uncovered for 15 minutes stirring every few minutes (you may need to drain off some of the fat depending on the mince you use).
Add the peas and cook for 5-6 minutes on a medium heat.
Stir through the coriander, lime juice and season to taste.
