Roughly chop the leek and fry in an ovenproof pan over a low heat with the olive oil and 50ml water for 8-10 mins.
Lightly whisk 5 eggs with 2 tbsp chopped fresh parsley and 60g grated Sainsbury’s extra mature Cheddar. Pour into the pan and cook over a low heat for 4-5 mins until the egg is set on the bottom but runny on the top.
Sprinkle over an extra 20g cheese and grill for 3-4 mins until lightly browned and set. Slice and serve.
Cook's tip: make sure this is cooked thoroughly if serving to mums-to-be and children.
