• 2 spring onions, washed
  • 2 courgettes, washed
  • 2 tsp olive oil
  • 2 tbsp frozen peas, cooked
  • A little mashed potato

    Trim the spring onions and courgettes and finely chop. Heat the oil in a large frying pan, add the spring onions and courgettes and fry, stirring occasionally, for about 5 minutes until soft and pale golden.

    Purée the cooked vegetables with the peas and a little mashed potato.
