Preheat the oven to 180°C/gas mark 4. Heat a griddle pan over a medium/high heat and add a little of the oil. Once hot, griddle the courgettes until softened and golden brown with griddle marks. Set these aside and repeat with the pepper and onion.
Lay the flatbreads on a baking sheet and spread half the houmous over each, leaving a 2cm border. Spread the griddled vegetables over the top and place in the oven for 10 minutes. Cut into slices to serve.
