Ingredients

  • 90g jar sundried tomato paste
  • 750g side of salmon
  • 1 lemon
  • Fresh parsley, to serve

Method

    Preheat the oven to 200°C/gas mark 6 and line a large baking tray with greaseproof paper. Spread the sundried tomato paste on top of the salmon, then lay it in on the lined tray. Squeeze over the juice from half the lemon, then cut the other half into slices and lay on top.

    Bake the salmon in the oven for 18-20 minutes, until it's cooked through and flakes easily. Sprinkle over the parsley to serve.
