Pour the rum, lime juice and sugar cane syrup into a highball glass.
Take the mint leaves in one hand and clap your other hand onto them, then add to the glass.
Fill the glass with crushed ice then, using a spoon, pull the ingredients up from the bottom of the glass and stir until combined.
Top with soda and garnish with a lime wedge and a mint sprig.
Top tip: clapping the mint leaves between your hands (as directed in step 2) will release the essential oils, adding delicious flavour to the mojito.
