• 25g shallots, finely chopped
  • 30g diced pancetta
  • 1 tablespoon vegetable oil
  • 450g cooked rice
  • 2 eggs, beaten
  • 3 spring onions, finely chopped
  • 2 tablespoons Lee Kum Kee Premium Oyster Sauce (to make seasoning mix)
  • 2 tablespoons Lee Kum Kee premium light soy sauce

    Mix together premium oyster sauce and premium light soy sauce to make a seasoning mix.

    Stir fry diced shallots and pancetta in 2 tablespoons of oil until lightly browned; turn down the heat to medium before adding in the seasoning mix.

    Add the rice, egg and chopped spring onion to the seasoning mix, mix well and heat through, before serving.

    Cook's tip: Add in a teaspoon or two of Lee Kum Kee chiu chow chilli oil to make it spicy and aromatic.
