Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, diced
  • 2 cloves garlic, crushed
  • 2 x 390g cartons chopped tomatoes
  • 1 tablespoon tomato puree
  • A pinch of sugar
  • 2 tablespoon soy sauce
  • 1 tablespoon dried oregano
  • 2 dried bay leaves
  • 320g penne pasta
  • 28g bag basil, leaves roughly chopped

Method

  1. 1 1. Put the olive oil in a medium saucepan over a medium heat. Add the onion and cook for 8-10 minutes, until softened.
  2. 2 2. Add the garlic and cook over a low heat for 1 minute, then add the tinned tomatoes, tomato puree, sugar, soy sauce, oregano and bay leaves. Add a splash of water and season, then leave to simmer for 40 minutes until thickened. Remove the bay leaves.
  3. 3 3. Meanwhile, bring a large pan of water to the boil. Cook the pasta to packet instructions, then drain.
  4. 4 4. Stir the chopped basil through the pasta sauce, then add the cooked pasta. Divide between 4 plates to serve.
