Ingredients

  • 4x 250g pork chops
  • Sea salt, to season pork
  • Freshly ground black pepper, to season pork
  • A lug of olive oil
  • 2 eating apples, sliced into 8 segments
  • 1 knob of butter
  • 4x potatoes, peeled and diced

Method

  1. 1 Preheat the oven to 200°C/400°F/gas mark 6.
  2. 2 Lay the chops on a board and make 2cm deep cuts along the fatty side of them.
  3. 3 Sprinkle with salt and pepper.
  4. 4 Peel and dice 4 potatoes and lace with olive oil before placing in the oven for 45 minutes or until browned and crisp.
  5. 5 Add a lug of olive oil to a hot pan, and then add the chops to the pan or griddle and cook for 8 to 10 minutes (depending on their thickness), turning every minute or two, until coloured on both sides.
  6. 6 Add apples and a knob of butter to the fan and fry until lightly golden.
  7. 7 Plate the chops and serve with the apple wedges on top and potatoes on the side, with a drizzle of olive oil.
