Ingredients

  • 350g carrot – peeled and grated
  • 350g raw beetroot – peeled and grated
  • 2 shallots – sliced finely
  • 2 tsp cumin seeds
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Handful of parsley – chopped up
  • 20g Pumpkin seeds – toasted

Method

    Mix together the grated vegetables.

    Heat the cumin seeds for 2-3 mins and mix through the vegetables

  3. 3

    Mix together the oil vinegar and parsley – pour over the veg and toss to marinade – top with the toasted seeds.
