First make the dressing. Whisk together the lime juice, honey, ginger and oil then season with salt and pepper. Set aside.
Peel and grate the beetroot, carrot and apple into a bowl. Use a coarse-bladed grater for ease and speed. Toss in the dressing, mixing well.
