Ingredients

  • 2 large limes, juice only
  • 1 tablespoon clear honey
  • 1 tablespoon freshly grated root ginger
  • 4 tablespoons light olive oil or grapeseed oil
  • Salt and freshly ground black pepper
  • 4 medium raw beetroots (total 350g approx.)
  • 300g carrots
  • 4 crisp dessert apples

Method

    First make the dressing. Whisk together the lime juice, honey, ginger and oil then season with salt and pepper. Set aside.

    Peel and grate the beetroot, carrot and apple into a bowl. Use a coarse-bladed grater for ease and speed. Toss in the dressing, mixing well.

    Cover and chill until ready to serve.
