Put the sugar in a tall glass and sqeeze in the juice from the lime half.
Fold 2 whole sprigs of mint into the glass, and add half of the sparkling water.
Muddle all of these ingredients together in the bottom of the glass to release the flavours.
Half fill the glass with ice cubes, then pour in the rum. Stir together.
Top up with more ice cubes to fill the glass, then add the remaining sparkling water.
Add a straw and garnish with a sprig of mint to serve.
Cook's tip: You can use soda water in place of the sparkling water if preferred.
