In a medium frying pan, fry and crisp the bacon, chorizo and beef mince. Add the green pepper, red onion and chilli and sauté for 2-3 minutes, then season to taste. Add the stock cube and paprika and mix well.
Remove from the heat and stir in the sour cream, sweetcorn and kidney beans. Tip into a round casserole dish and mix in 80g mozzarella and 80g red Leicester. Mix thoroughly, then top with the remaining cheese and bake at 200°C/fan 180°C/gas mark 6 for 18-20 minutes. Serve with the tortilla chips.
