Ingredients

  • 1½kg broad beans
  • 1 spring onion, trimmed and finely chopped
  • 2 tbsp crème fraîche
  • 15g fresh mint leaves

Method

    Pod the beans. Bring a small pan of water to the boil and carefully tip the beans into the pan. Boil for 3 minutes, then drain and plunge straight into a bowl of cold water. They should pop out of their skins when you peel them.

    Put the beans into a blender with the spring onion, crème fraîche and mint, and purée until smooth. Serve with cruditès of your choice.
