Ingredients

  • 2 white baguettes, sliced
  • 250g mozzarella, grated
  • 250g aubergine, diced
  • 100g baby spinach leaves
  • 150g tinned cherry tomatoes
  • 100g Parma ham
  • 100g anchovies
  • Olive oil, drizzled

Method

  1. 1 Preheat oven to 180°C, fan 160°C, gas mark 4.
  2. 2 Place the sliced baguette on a baking tray and drizzle with olive oil.
  3. 3 Layer half the slices with ham, anchovies and tomatoes and layer the other half with spinach, tomatoes and aubergine.
  4. 4 Cover all with mozzarella and another fine layer of the other ingredients.
  5. 5 Cook for 3-5 minutes and serve while hot.
