Ingredients

  • 2 white baguettes, sliced
  • 250g mozzarella, grated
  • 250g aubergine, diced
  • 100g baby spinach leaves
  • 150g tinned cherry tomatoes
  • 100g Parma ham
  • 100g anchovies
  • Olive oil, drizzled

Method

    Preheat oven to 180°C, fan 160°C, gas mark 4.

    Place the sliced baguette on a baking tray and drizzle with olive oil.

    Layer half the slices with ham, anchovies and tomatoes and layer the other half with spinach, tomatoes and aubergine.

    Cover all with mozzarella and another fine layer of the other ingredients.

    Cook for 3-5 minutes and serve while hot.
