Place the dried pineapple in a heatproof bowl and pour boiling water over the top. Leave to sit for 10 minutes until cooled, then drain and place it with half the coconut and the rest of the ingredients into a food processor. Blend until fairly smooth.
Spread the remaining coconut on a plate. Roll teaspoonfuls of the mixture into balls, then roll them in the dessicated coconut. Place in the fridge to firm up for at least 1 hour.
