Preheat the oven to 200°C/fan 180°C/gas mark 6. Combine the honey, soy sauce, garlic, ginger, lime zest and half the lime juice, then pour it over the cauliflower florets in a bowl. Combine, making sure all the cauliflower is covered in the sauce.
Place the cauliflower on a baking tray lined with baking paper and bake in the oven for 20-25 minutes. Baste with the remaining sauce every 10 minutes or so, until the cauliflower is tender and beginning to darken.
Meanwhile, combine the Greek yogurt, honey and sriracha for the dip and season to taste. Once the ‘wings’ are done, transfer to a large serving bowl and gently toss with the spring onion and sesame seeds. Place them on a tray on top of baking paper for sharing, alongside the dipping sauce.
