For the pizza

  • 335g cherry tomatoes
  • 2 tbsp tomato purée
  • 1 garlic clove
  • 200g mozzarrella
  • 80g pineapple chunks
  • 40g ham, cut into small squares
  • Bunch of fresh basil to garnish
  • 4 wholewheat tortillas

For the salad

  • 100g spinach
  • 100g rocket
  • Handful of cherry tomatoes

    Preheat the oven to 240°C/fan 220°C/gas 9. Put the cherry tomatoes, tomato purée, fresh basil, garlic, and a pinch of salt and pepper into a food processor and blitz to a chunky sauce.

    Transfer to a non-stick pan over a medium heat and simmer for 10 minutes, stirring occasionally until thickened and dark.

    Lay a tortilla on a board and spread with a quarter of the tomato sauce.

    Top with the mozzarella, ham and pineapple (a quarter of each per pizza).

    Slide the pizza onto a baking sheet. Bake for 3 minutes until the tortilla is starting to brown at the edges and serve straight away.
