Ingredients

  • 4 by Sainsbury’s Ciabatta Rolls
  • 2 packs of Sainsbury’s Jackfruit Quarter Pounders

Topping

  • Handful of fresh rocket

To make the tzatziki

  • 175g cucumber, grated
  • 120g coconut yogurt
  • 2 tbsp dill, chopped
  • 2 tbsp fresh mint, chopped
  • Juice of ¼ lemon, or ½ tbsp of lemon juice
  • 1 clove garlic minced

For the tomato salsa

  • 200g cherry tomatoes, chopped
  • 25g / ¼ red onion, finely diced
  • 1 tbsp lime juice
  • 3 tbsp coriander, roughly chopped
  • Pinch of chilli flakes
  • 1 tbsp extra virgin olive oil

    Cook the Sainsbury’s Love Your Veg! Jackfruit Quarter Pounders as per instructions on pack

For the tzatziki

    Grate the cucumber and pop it into a large sieve to drain over a bowl. Squeeze out as much moisture as possible then transfer to a large bowl

    Add all the other ingredients and mix well

To make the salsa

    Chop the tomatoes & onions and add them to a small bowl. Add the lime, olive oil and seasonings and stir to combine. Stir in the coriander

To serve

    Slice the ciabatta rolls in half and lightly toast the insides of the buns

  2. 2

    Top with the burgers, tzatziki, salsa & some fresh rocket
