Ingredients

For the tikka skewers

  • 180g pack Naturli Chick Free
  • 75g unsweetend dairy-free yoghurt
  • 2tsp lemon juice
  • 1tsp smoked paprika
  • ½ tsp ground cumin seeds
  • 1tsp ground coriander seeds
  • 2 cardamom pods, seeds ground
  • ¼ tsp ground turmeric

For the raita

  • 250g unsweetened dairy-free yoghurt
  • 3 cooked beetroots (the vacuum packed packs are ideal)
  • 50g cucumber, finely diced
  • 1/2 Granny Smith apple, grated
  • 1 clove garlic, crushed
  • 8-10 fresh mint leaves, chopped
  • ¼ tsp salt

To serve

  • 1 small red onion, finely sliced
  • 1 tomato, roughly chopped
  • 1 tbsp chopped coriander leaves
  • 25g cucumber, sliced into half moons
  • you'll also need 8 small bamboo skewers, soaked in cold water for 30 minutes

Method

    Preheat the oven to 200°C/fan 180°C/gas mark 6.

    In a large bowl, whisk together all the ingredients for the skewers except for the Naturli Chick-Free pieces.

    Add the Naturli Chick-Free pieces and gently mix to coat. Allow to marinate at room temperature for 10 minutes whilst you make the raita.

    To make the raita: In a medium-sized bowl, stir together the dairy-free yoghurt, apple, cucumber, garlic, mint and salt. Blend 2 beetroots until puréed. Finely chop the remaining beetroot. Stir the beetroot purée and chopped beetroot into the yoghurt mixture. Garnish with reserved mint (optional). Place in the fridge to chill.

    To make the skewers: Carefully skewer the Chick-Free pieces onto the soaked wooden sticks. Arrange on a baking tray lined with greaseproof paper. Bake for 10 minutes, turning halfway to ensure they brown evenly. Alternatively, cook the skewers on all sides using a griddle pan. Only turn once griddle marks appear on the surface to ensure the marinade doesn’t stick to the pan.

    Serve with the beetroot raita, sliced tomatoes, cucumber, red onions and fresh coriander.

    If you don't want to skewer the tikka, simply arrange the marinated Chick-Free pieces in the oven for 10 minutes, turning halfway to ensure they brown evenly.
