Preheat the oven to 200°C, fan 180°C, gas mark 6.
Melt the butter in a small frying pan and scatter over the dark brown sugar. Heat until caramelised.
Add the apple slices and cook for 4-5 minutes on each side. Remove the wrapping from the Camembert and place the cheese back in the carton.
Fan out the caramelised apple slices on top of the Camembert, and spoon over any sauce left in the pan. (It is best to do this with tongs as the caramel will be very hot.)
Sprinkle with thyme leaves and bake in the preheated oven for 20 minutes.
Meanwhile, thinly slice a Taste the Difference half ciabatta and toast under a medium grill until golden.
Serve the Camembert tarte tatin with the grilled ciabatta slices for a wonderfully warming treat that's perfect for sharing.
